Energy Bites

I am not the kind of person who enjoys cooking.  Unfortunately, for someone on a budget, eating healthfully means making most of your food at home.  So while I have accepted the fact that I will be spending time in the kitchen each week, I have gotten pretty good at keeping that time to a minimum.  One of my favorite “hacks” are these energy bites.  You can find many different variations, but here is how I make them: 

Ingredients: 
2 cups rolled oats (I use old fashioned, but I don’t think it really matters)
½ cup nut butter (I just use peanut butter that needs to be stirred, but again, whatever you have handy will work)
½ cup honey
½ cup mini chocolate chips (mini m&ms is also a fun, colorful variation)
1 tsp cinnamon (I added this on accident once, and decided I liked it!)
1 tsp vanilla


Directions: 
  1. Combine all of the ingredients,
  2. Refrigerate for at least 30 minutes.  I often leave it overnight.  Don’t skip this step.  It makes the next step infinitely easier.
  3. Roll into balls.  Probably close to 30, but that depends on what size you make them.  
  4. Store in the fridge. 

While these aren't necessarily a low-calorie food, they also aren't the kind of thing you will mindlessly eat too much of ... they are too filling!  And they are great for taking on the road so I am not tempted to grab gas station junk.  They are much better choice than the Twix or Sweedish Fish I tend to be drawn to!
